Skimmelberg Rooibos Chamomille

Rooibos is a shrub that grows in the Cedar Mountains of the Western Cape in South Africa. By the locals Rooibos is called ‘Stokkies’, after the shape of the shrub. Rooibos has no leaves, but twigs (stokkies).

After harvesting the fresh Rooibos is chopped into pieces. This pieces (wet green rooibos) are made to sweat, causing it to oxidize. This is how it gets the red color. After this, it is dried in the sun for about 8 hours. After drying, it is sterilized and packed

Rooibos has been extremely popular for a very long time. Good for trade, but bad for the Rooibos. Without naming names, every tea producer jumped on rooibos. The result was that all Rooibos was bought up. powder and sticks were mixed to give color and the flavor was lost. And the Rooibos farmers didn’t earn a Rooi cent

But Rooibos deserves more. It is a tea that calms the digestive tract. For this reason it is given to infants in South Africa to suppress colic

Rooibos is an anti-inflammatory, especially in the digestive tract. Wherever allergies arise. It is therefore seen as an aid for or against allergies.

Rooibos is full of antioxidants. Antioxidants are known to fight free radicals. Free radicals damage cells. Green Rooibos (non-fermented rooibos) contains even more antioxidants. Many herbal teas say that the tea water should be around 80 degrees to prevent it from becoming bitter. Although Rooibos is a herb, it does not become bitter. Not even if you let it sit in a jar for a day

Amount of tea
Rooibos is generally drunken as a strong tea in South Africa. 3 to 4 bags in a jar are no exception

Temperature 90 degrees
Bring the water to a boil and wait about a minute before pouring it into the glass or jar. The great thing about Rooibos is that it gets better as the water temperature drops.

Steep
Let Rooibos steep for at least 5 minutes, that way all the flavors will come out. Longer is also allowed. Rooibos does not become bitter, because it does not contain tannins. Be careful if it is mixed with another herb or spice, which can cause bitterness.

Variations
Rooibos can also infuse very well in cold water. It will take much longer, at least an hour. But the taste is very nice and soft. It is also the ideal iced tea.

For an ice tea make a very strong Rooibos tea (double the number of bags). Let it cool and pour it over ice cubes.
